I'm Late This Week

I said I was going to post every Wednesday, but the day AND the evening got away from me.  Yesterday I just couldn't seem to move a muscle of this old body, so I just relaxed and let everything go.  I am doing a little better tonight, so have no good reason to procrastinate longer.  Besides, I am eager to hear from everyone again.  It's still hard for me to believe that it is Thursday though. 

I just have to say, before I forget, that my new glasses are working great!!  It's about time.  It is so much better to have my prescription glasses work, instead of having to use the kind you buy at the drugstore.  My eyes don't get quite so tired now when I do all my puzzles each morning.  I'm definitely having some problem with allergy in my eyes though, due to all the junk that is floating through the air.  They are scalping all the grass and planting rye for the winter here in our beautiful Palm Desert.   A lot of it has beeen going on the last week or so in our neighborhood, so of course each fall I have a bit of a problem, not as much as I did before I started to take a nasal inhalation of a spray with cortisone in it.  It is called fluticasone.  It has helped a lot.  I take it in the spring too for my hair fever, or I would really be miserable.  Darn these allergies of mine!

Our party last Saturday at Pikes was a great success!!!  It was for the husbands of the High Priests and their wives.  We had almost forty people there and the food was absolutely terrific!  Everyone brought either an appetizer or a dessert.  It was from 4:00 to 6:00 in the afternoon, but I think everyone ate so much that it was likely  no one went home and had dinner.  So many of the appetizers were hot and yummy.  I took one of my all time favorite and EASY desserts called Butter Pecan Squares.  It is the easiest dessert ever and I needed something easy.  I decided to post the recipe right now.  Try it...........I can gaurantee it will be a hit with you too.

Butter Pecan Squares:

1/2 cup butter, softened                            1egg
1/2 cup brown sugar                                 1 teaspoon vanilla                 
3/4 cup flour                                              2 cups milk chocolate chips
3/4 cup chopped pecans

In large mixer bowl cream butter, sugar, egg, and vanilla until light and fluffy.  Blend in flour. Stir in 1 cup chocolate chips and 1/2 cup pecans.  Pour into greased 8 inch square baking dish.  Bake at 350 degrees for 25 minutes.  Remove from oven and immediately sprinkle with remaining  1 cup of chocolate chips.  When chips melt, spread evenly over top with knife.  Sprinkle with 1/4 cup chopped pecans.  Cool, then cut into squares.  Makes 16.

Try it:  I know you will love it!!  I sometimes use regular chocolate chips for the dough, but always try to use milk chocolate one on the top.

Yesterday we visited an older lady from our Ward who lives in a beautiful assisted living facility.  We took a whole recipe to her so she could share it with the other four ladies who live there.  I am sure they will love it.  I meant to call her today to see how they liked it, but have had such a busy day that I forgot.  This morning I went to my hemotologist to get my hemoglobin tested and to see the doctor.  My hemolglobin was way way down, so they kept me there for the rest of the morning to have an iron infusion.  I have to go back in a week and have another one.  It's no wonder I could hardly drag myself around.  I know I will feel much better after getting my iron next week.  It seems like I do have to have these infusions fairly often and I hadn't had one since May.  They never have been able to find out why I am losing blood.  They did an endoscopy and a colonoscopy but couldn't find anything amiss in either my stomach or my intestines.  So I guess I'll just have to keep on with the iron, or even have another blood transfusion one of these times. 

Sorry I'm late, who knows, I may take Sue's advice and just post when I feel like it, but after all twelve of you post I know that if I want to hear from you again, I will need to post.  Also, I do like to keep track this way of what I do each week.  It is like keeping a journal for me.  I can't imagine that any of you can truly be interested in that, but I am glad you are.  I LOVE HEARING FROM YOU GUYS ANY TIME, and that's the truth.  I love you all.................

  2. I hope the doctors have put the iron strength back in - or so will that dessert have :-)
    I envy you the climate right now - we got our first snow today. Hopefully not for long ...

  3. Hope that you continue to feel better! And that you don't have to deal with the allergy symptoms. Thank you for sharing your recipe and I am sure it was a wonderful hit with your et-together and with the ladies at the assisted living facility.

    (I totally know what you mean about getting a post up! I try to get at least one post a week up and try to get them up around Wens...but I do good to actually get it up by Friday ...or before a couple of weeks have passed! ;o)

    I wanted to let you know also, that you are one of the two that won a copy of that aviation book that I had reviewed. Sue sent me your address. I will send it to the publishers. They sent my copy so very quickly, so I would think your copy should be sent off pretty quickly too.

  4. Hi Darlene, take Sue's advice and don't fret needlessly about being late to blog. Just blog when you feel like it and don't get stressed about it.
    No wonder you felt tired with low iron in your blood. I'm glad that you are getting that looked after.

    It's amazing the difference prescription glasses does.. I'm glad that you got your new glasses.

    Even though you are not feeling well you still attend functions and cook desert for the party. Butter Pecan square, yum yum, one of my very favorite square.. I can't have chocolate chips as they have soy liticin in them and so does an enormous amount of bought food. I still love them even without chocolate chips.

    Sorry about your fall allergies. Maybe an air cleaner would help a bit. I have one in my bedroom and it filters the fine particles in the air and once in a while the filter needs washing.

  5. YES! - Another good recipe from you. I can't wait to try it! I'm glad your glasses are working better for you. I have prescription readers too, and they're MUCH better than the drugstore kind.
    I can sympathize with the allergies. We're having lots of wind here today and my sinuses aren't having it! My poor husband will probably have a headache tonight from all the junk in the air.
    Hope the iron makes you feel like your old self (or even better!) Take care - enjoyed this post. Maybe especially because of the recipe?

We have a Ward Halloween party tonight and if I have pecans, I'll make it. Thanks! It's been a busy week for us but now we are gearing up for this crazy "Frankenstorm" (hurricane Sandy) that is suppose to effect even Ohio...bringing in snow by Tuesday. Seriously? Too early! Our city had trick or treat on Thursday so atleast the storm won't hurt the kiddos here. I need to blog about so much stuff! Anyway, I hope you have a great weekend and stay allergy free!

  8. No wonder you feel tired -it sounds like boosting the iron, maybe on a more frequent basis, will make you feel the way you should. I couldn't believe the difference when my Vitamin D deficiency was addressed.
    Being Spring it is allergy season here in Australia, - and looking after our daughter's shedding cat gives us a double-whammy of sneezes and snuffles.
    I finally figured out how to get rid of the "prove you're not a robot" thing on enabling comments. At last!

  9. I am just listening to "Time Out for Women," Mom, and Jenny Oaks Baker is playing the violin as I write this. The tone of her violin isn't as beautiful to my ear as yours always was, but I am enjoying listening and thinking about your many talents. She also bore testimony about her mother, whose influence was so important in her life. I hope you know how important you are and have been in my life, and that I love you.

    I'm sorry you are still having iron problems, but am glad you have gotten the infusion so you can feel better. It's great that you finally got a good prescription in your glasses! That's a first, right?

    I am struck by how much your blog friends care about you and feel grateful to all of them for the wonderful friendship they offer you. Of course, you know I feel they are lucky to know you!

  11. I read this on Friday but I was flying out the door at the time and didn't have time to respond. I always enjoy your posts and look forward to them.

    I'm surprised you were using those drug store glasses up until recently...I had to give those up years ago. You must have strong eyes. I will definitely try your recipe. It sounds like something my kids would enjoy. Thank you for posting it.

    Hope your allergies clear up soon. Be sure and wear your glasses when you go outside...that seems to help a little with the air particles.

  12. I do hope that your allergies get better. I have allergies year around with a cough. The cough is caused by the allergies and reflux. The last couple of years I have had a few months of not coughing. There is a longer story to this all.
    I am happy they are giving you iron shots. I hope it helps you alot. My mother them and also had B12 shots and they helped her a lot.
    Your party sounded so fun. You have such great friends and many social events. Because of our Inner City Project we don't do very many social things. We still belong to our home ward; but don't usually see very many of our friends. We do drop in to our home ward when there is mission farewell and our Stake conference. Otherwise, we just attend our assigned mission ward. It's good. I do get Visiting Teachers which is nice. I have two new sisters and they are both young with little children.
    I will try that yummy looking dessert.
    By the way I should tell you that although we do have guns; my husband has a large safe he keeps them in. I would worry if they were out with all of the grand kids we have. Like you I don't think I could shoot anyone either. I just pray we keep safe.

  13. That must be annoying to get winter allergies. Why do they plant rye in the winter - is it a fodder crop?

    hope your blood issues resolve with treatment. My son has been going for blood tests - he thinks he may have residual effects from his time in Nepal this summer.
